Recipe of Agua de Dolores, the traditional drink of Lent

Dolores water is also known as Lenten salad water, Christ’s blood, or holy water. It is traditional of Guanajuato and is taken on the day of the Virgin of Dolores as it is offered on the altars that are placed for this occasion.

We have the two traditional recipes. You decide which one to enjoy this Dolores Friday.

Agua de Dolores with beets

Water of pains


  • 2 beets
  • 2 bananas
  • ½ Chinese melon
  • 1 piece of lettuce
  • 2 peeled and chopped oranges
  • 3 and a half liters of water
  • Sugar to taste


  1. Wash and peel the beets, cut them into large chunks and cook them in 1 1/2 liter of water until soft. Reserve both the beets and the cooking water.
  2. Let the beets cool and cut them into small pieces.
  3. Cut the lettuce, wash it and disinfect it.
  4. Wash, peel and chop the melon, oranges and banana.
  5. Put everything in a large bowl and mix. Add the remaining 2 liters of water, the cooking water from the beet and sweeten to taste.
  6. Refrigerate for at least 3 hours.

Agua de Dolores with orange juice and strawberries

Water of pains


  • 2 bananas
  • 1 piece of lettuce
  • The juice of 3 oranges
  • 2 peeled and chopped oranges
  • 15 strawberries
  • 3 liters of water
  • Sugar to taste.


  1. Wash and disinfect the strawberries.
  2. Cut the lettuce, wash it and disinfect it.
  3. Squeeze the juice of 3 oranges. Peel the remaining two and cut them into small pieces along with the banana and strawberries.
  4. We put everything we have chopped in a large container and mix with the 3 liters of water.
  5. Sweeten with sugar to taste.
  6. Add the orange juice and mix.
  7. Refrigerate for a minimum of 3 hours.

In both recipes we can put a teaspoon next to the glass so that you can eat the fruits more easily.

It is very important to consume them the same day they are prepared because the lettuce oxidizes and the fruits ferment.

And why Dolores water?

According to the Catholic tradition, the Virgin Mary, in the invocation of the Virgin of Sorrows, wept tears of blood before the passion and death of Jesus Christ, her only son. This water, red in color similar to that of blood, seeks to honor the tradition of this virgin’s tears.

But even if you’re not particularly religious or seem a little scatological, dare to prepare and enjoy them. They are delicious, refreshing and nutritious, ideal for the heat.
