  • 2 cups mushrooms
  • 1 Teaspoon. minced garlic

  • 1/2 cup grated cheese butter
  • 1/2 cup grated Gouda

Mix the cheeses in a bowl and put them in the refrigerator for 10 minutes. Place a steel pan with a tablespoon of oil on the grill over high heat. Add the garlic and cook for three minutes. Add the cheeses and cook for about 10 minutes, until completely dissolved. Arrange the mushrooms on the edge of the grill and cook for six minutes. Sprinkle oregano and paprika over the melted cheeses. Drizzle with the rest of the oil and season with salt and pepper. Serve with the mushrooms.

  • 1 kg huamantanga potatoes, blanched and pressed
  • 3/4 cup unprepared flour
  • 2 egg yolks
  • 2 tbsp. Butter
  • 2 tbsp. chopped white onion
  • 2 tbsp. White wine
  • 1 1/2 cups fior di latte
  • 1/4 cup cream cheese (like Philadelphia)
  • 3/4 cup grated Parmesan
  • 1/2 cup grated edam cheese
  • 1/2 cup grated Andean cheese
  • salt and white pepper

Preparation:

Bring four liters of water to a boil in a saucepan. Meanwhile, put the potatoes in a large bowl. Add the flour and season. Add the egg yolks, one by one, and mix with a spatula until you get a dough. Take it to the work table and work it with your hands until the mixture is smooth. Divide the dough in two and form tubular strips. Then cut them into pieces and form gnocchi.

Put them in a floured container, separated from each other. At the end of the formation of the gnocchi, cook them into small pieces in boiling water. Drain and drain them. Melt the butter in a skillet over medium heat. Add the onion and cook for three minutes. Add the wine and let the alcohol evaporate for a few seconds.   • 200 g of mozzarella

  • 8 peeled and seeded tomatoes, sliced
  • 2 cups homemade tomato sauce
  • salt and pepper

Make long, shallow incisions on both pizza discs so that the sauce can moisten them. Put the tomato sauce and tomato slices; Season with salt and pepper.
